Yesterday my 2nd daughter turned 3. She is my third child and I no longer dig the hassle and stress of throwing the extravagant kiddie birthday party. Will she remember? No. Does she care? No. Of course I want to make her day special with her friends at school and family who come over to celebrate the big day. I have very little extra time, so when it comes to quick and easy, I’m all for it!
I decided to make cupcakes featuring her favorite character, Minnie Mouse. It’s so easy, even the kids can help.
Here’s How I did it:
I bought Wilton Fondant at AC Moore with a 50% off coupon and pink and black dye. Dye some fondant black and some pink. Wilton also sells fondant pre-colored. Keep the fondant covered in plastic wrap so that it doesn’t dry out.
To make the ears simply roll out the black fondant with a rolling pin on a flat surface sprayed with pam or lightly dusted with cornstarch. Dust off the cornstarch using a pastry brush. Cut out circles with circle cutters and place onto a cookie sheet to dry.
Take the pink fondant and shape into a bow. Use the end of a skewer to make the wrinkled shape in the bow. Set on a cookie sheet to dry. Roll a small ball, lightly dampen the center of each bow with water and flatten the ball making it look like the center of a bow.
To ice your cupcake, fill a freezer plastic bag with icing, cut the bottom corner to the desired size and pipe a swirl on top of the cupcake. Put two ears on top and add the bow. I bought Wilton Heart Sprinkles to add to the cupcakes. Ta da!! Enjoy!
